肉桂卷 (Cinnamon Rolls)



成份:

麵包材料 (12個份)
熱水 1杯
高筋麵粉 3杯
即溶奶粉 3茶匙
牛油(軟化)1/4 杯和1茶匙
雞蛋 1隻
細砂糖 1/4杯
鹽 1-1/2茶匙
酵母 1茶匙

焦糖材料
牛油 1/3 杯
黃糖(Brown Sugar) 1/3 杯
雲呢拿雪糕  1/2 杯

餡料
牛油軟化(塗抹用) 1/2 杯
黃糖(Brown Sugar)1/2 杯
肉桂粉 1 湯匙


步驟:

  1. 將所有麵包材料搓勻至有彈性而不黏手。
  2. 放於已灑粉及鋪有保鮮紙之膠盤上,用保鮮紙包住,放在溫暖處發酵 30分鐘。30分鐘後,取出麵糰,用手指插入麵糰放氣,然後摺疊麵糰,反轉,放回原位,再發酵30 分鐘。
  3. 同時,在平底鍋中,熔解1/3 杯的牛油。並加入1/2 杯的紅糖和雪糕;沸騰時,再續煮2分鐘。將糖漿倒入 9 x 13 吋的烤盤中(烤盤模預先掃油)
  4. 發酵完成後,將麵糰取出放於巳撒粉之檯上,輕輕桿開成長方形。
  5. 在長方形麵團表面均勻塗上奶油、灑上肉桂粉及 1/2 杯的紅糖。
  6. 捲起麵團,切成12件,切面朝上,排放在裝有焦糖的烤盤上。
  7. 放在溫暖處(或已預熱175℃的焗爐頂),最後發酵約45分鐘。
  8. 用175C焗,約20~25分鐘,直到呈金黃色即可。
