朱古力慕斯 (Chocolate Mousse)



成份:

無糖朱古力   30g
甜朱古力    20g
粉末明     5g
水       20cc
鮮奶油     175cc
蛋黃      2個
白砂糖     35g
牛奶      125cc
香草精.格蘭瑪尼耶(別問我這是什麼) 各少?
乳蛋白     (蛋白3個、白砂糖35g)
裝飾用朱古力枝 少?

步驟:

  1. 將朱古力切細,一起放入大碗內。
  2. 明膠浸泡水中,隔水加熱至溶。
  3. 將鮮奶油碗底浸在冰水中打至6分起泡。
  4. 將蛋黃打散,加入白砂糖用打蛋器打至呈白色後徐徐加入溫度與人體相似的牛奶,混合。
  5. 將4.倒入鍋內,用弱火將全體煮勻,並用木枃一邊攪拌。離火待稍涼後,加入香草精及2.的明膠,混合。
  6. 將5.濾入1.碗內,使朱古力溶化。將碗底浸在冰水中,待呈糊狀後加入格蘭瑪尼耶及1/2量的3.鮮奶油,拌勻後再加入剩下的鮮奶油,用木杓似切般攪拌。
  7. 再加入白砂糖、乳蛋白,以不弄破泡為原則,似切般拌勻,然後注入模型中,放入冰箱冷藏。
