法式檸檬蛋糕 (French Lemon Cake)



成份:

全蛋9隻(500g)
蛋黃2個(增加膨脹性與香味)
鹽5g
細砂糖350g
低筋麵粉450g(一定要過篩)
奶油150g
清水100g
檸檬汁30g
奶水100g或鮮奶80g
檸檬口味的巧克力磚適量
步驟:

  1. 將全蛋蛋黃細砂糖鹽一起用快速打至9分發,(倒入鋼盆,下加熱水保溫)加入麵粉用
    括刀攪拌均勻後,再加入(奶油+清水+奶水煮開)攪拌均勻,再加入檸檬汁攪勻,將麵糊
    放入模型(檸檬狀)入烤箱
  2. 出爐冷卻後,再抹上溶好的檸檬巧克力即可烤的時間及溫度:全火190度,放中層烤
    20-25分

注意事項:
模型預先擦拭奶油,再撒上過濾後的高筋麵粉均勻備用
溶化檸檬巧克力時鍋中不能有水,可隔水加熱再溶化,避免燒焦
