抹茶紅豆麵包 (Green Tea Red Bean Bread)



成份:

A中種麵糰:
水 204公克
速溶酵母  4公克
高筋麵粉  340公克
B主麵糰:
低筋麵粉 85公克
抹茶粉  6公克
細砂糖  77公克
鹽  4公克
奶粉  34公克
蛋  43公克
水  9公克
奶油  43公克
改良劑  4公克
配料:
蜜紅豆 120公克
蛋液  少許

步驟:

1 速溶酵母加入少許室溫的水溶解;材料A和B的高筋麵粉過篩,備用。
 
2 取材料A篩過的高筋麵粉放入容器內,加入作法1溶解後的速溶酵母和水一齊攪拌至擴展。
 
3 將麵糰整型滾圓後,放入鋼盆中做基礎發酵90分鐘,即為中種麵糰。
 
4 將材料B(除奶油外)放入攪拌缸中,再把作法3的中種麵糰撕成小塊狀放入攪拌缸中一起攪拌成麵糰。
 
5 在作法4中加入奶油後,將麵糰攪拌至完成階段性。
 
6 蜜紅豆洗去表面多餘的豆沙,並瀝乾水份加入作法5內以慢速拌勻。
 
7 將作法6的麵糰分割為每個80公克,滾圓後鬆弛15分鐘,取一鬆弛好的麵糰以桿麵棍桿成牛舌狀,並於2/3處以刀子直切成6-7條之長條狀後捲起成圓筒狀後做最後發酵。
 
8 待麵糰發酵至約2倍大時,表面刷上蛋液後,放入烤箱以上火180℃、下火160℃烤焙約15分鐘左右即可。
