彩紋慕斯蛋糕



成份:

橘子果泥  256公克
濃縮柳橙汁  64公克
蛋黃  77公克
細砂糖  64公克
吉利丁片  18公克
動物性鮮奶油  321公克
鳩康地蛋糕體  1片
酒糖液  適量
彩紋蛋糕  適量
鏡面果膠  適量
白色巧克力片  適量

步驟:

1 將橘子果泥、濃縮柳橙汁、蛋黃、細砂糖放入鍋內煮到溶化至85℃後熄火。
2 再加入泡軟的吉利丁片溶化後,使其坐浴冰上攪拌至呈現出稀糊狀,.再加入動物性鮮奶油拌勻,即為慕斯餡料。
3 再將鳩康地蛋糕體分切成2片並各刷上酒糖液。
4 再取出圓形慕斯容器,將彩紋蛋糕放入並沿著慕斯模型圍繞一圈後,底鋪上一片作法3的鳩康地蛋糕體後,再倒入作法2的慕斯餡料,再鋪上另一片鳩康地蛋糕體,再倒入慕斯餡料,然後放入冰箱冷凍即可。
5 食用時將慕斯蛋糕脫模後,表面上塗抹上鏡面果膠,再以白色巧力片和水果作為裝飾即可。
