薑餅人 (Ginger Man)



成份:

  • 無鹽奶油 30g
  • 黃糖或黑糖 37.5g (25g)
  • 蜂蜜 80g (70g)
  • 低筋麵粉 230g
  • 薑粉 4g
  • 肉桂粉 2g
  • 蘇打粉 2g
  • 蛋 半個

  • 步驟:

    1. 蛋白與蛋黃分(只用半個蛋會有點不好控制)
    2. 將奶油室溫融化,放入黑糖及蛋白,用打蛋器打到有黏性
    3. 加入蜂蜜及蛋黃繼續打到有點烹蓬
    4. 麵粉、薑粉、肉桂粉、蘇打粉過篩,加入做法3.
    5. 輕輕揉,不要揉出筋度,但要揉到有點油亮
    6. 麵糰用保鮮膜包好,放入冰箱冷藏30~60分鐘
    6. 取出麵糰後壓平,再用薑餅人模型切出圖案
    6. 放入先前預熱180度的烤箱,烤15分鐘(家裡烤箱火力強的要自行調整)
    7. 烤好冷卻後,可在表面加上蛋白霜做薑餅人的裝飾
