檸檬林明頓蛋糕 (Lemon Lamington)



成份:

雞蛋……………………………………………………………………………5 隻
糖……………………………………………………………………………120g
麵粉……………………………………………………………………………120g
牛油溶液………………………………………………………………………20g
白朱古力………………………………………………………………………100g
檸檬香油………………………………………………………………………30g
椰絲……………………………………………………………………………適量
淡忌廉…………………………………………………………………………150g
鮮奶…………………………………………………………………………150ml
步驟:

(1) 雞蛋和糖打至厚白忌廉狀,輕輕拌勻。
(2) 放入已篩好的麵粉,再慢慢攪勻。
(3) 放入已預溶牛油,攪勻後倒入長方形焗盤,再放入已預熱180 度的焗爐焗約20 分鐘,待冷卻備用。
(4) 將白朱古力、淡忌廉及鮮奶混合碗中,隔熱水以低中溫煮溶,待涼後加入檸檬香油攪勻成檸檬漿。
(5) 將蛋糕切成邊長約1 吋的方塊,沾上檸檬漿,再立刻黏上椰絲,放於架上待凝固,最後放入雪櫃內待凍便成。
