雲石芝士凍餅 (Marble Cheesecake)



成份:

材料 :
70 克糖
1 隻雞蛋
3 湯匙水
250 克忌廉
1 茶匙?酒
60 克朱古力
1 湯匙魚膠粉
250 克忌廉芝士
雲呢拿油少量

餅底 :
60 克無鹽牛油
150 克牛油手指餅
步驟:

1) 先將牛油手指餅用攪拌器打碎,加入已溶了的牛油在餅模內拌勻,壓實後放入雪柜內雪硬。
(2) 將雞蛋和糖以打蛋器拌勻打至成奶白忌廉狀備用。
(3) 另備一隻大碗,以打蛋器將忌廉芝士打至軟滑,加入蛋液拌勻。
(4) 魚膠粉加入三湯匙水開勻後,隔水坐熱,慢慢加入忌廉芝士中,加入雲呢拿香油,再輕輕拌入忌廉。
(5) 另備一隻碗將朱古力粒隔水煮溶,將三湯匙忌廉芝士混合朱古力液中拌勻,加入?酒備用。
(6) 先將忌廉芝士倒入餅模中,在中央位置慢慢注入朱古力,用刀自中央位置隨意向外將朱古力液伸展成雲石花紋,放入雪柜雪至少兩小時至凝回即成。

備註 :
(1) 雖然用微波爐可以輕鬆的將牛油、朱古力等煮溶,但最佳的方法還是以熱水隔水坐溶,因熱力會較均勻而且不會過熱。
(2) 要雲石花紋做得平均,要先由中間開始將朱古力加入,而且份量不能太多。
