成份:

麵絲材料:(每個40g,約16個)
高筋麵粉400克、蛋240克勤克(約5個)、水40克、泡打粉6克

糖水材料:(每個43g,約16個)
砂糖300克、麥芽糖300克、蜂蜜25克、水80克

其他:
葡萄乾少許。
步驟:

1. 高筋麵粉、蛋、泡打粉倒入盆中,加入水上下攪拌,鋼盆邊的麵粉要往中間拌
2. 攪拌成糰後,移至桌面搓揉至均勻即可
3. 麵糰覆上保鮮膜,鬆弛約10分鐘
4. 在桌面上灑些麵粉,放上麵糰,用捍麵杖由中間向外捍開,將麵糰捍成四方形
5. 將捍盟之麵糰略分成四等分,兩端之麵糰向中間再對摺一次
6. 摺好之麵糰用刀切成細絲狀
7. 切好之麵絲,撒上些許麵粉,用手把麵絲上下抖動,防止麵絲黏在一起
8. 油鍋先加熱,大火約160C,放入適量的麵絲,以大火油炸至表面呈金黃即可
9. 將糖、麥芽糖、蜂蜜與水倒入鋼盆中,用中火加熱,煮至黏稠,木杓拉起時會有絲狀
10. 將葡萄乾與炸好的麵絲倒入鋼盆中與糖水拌勻後,立即倒入已上油之平盤中,分為兩盤,用手稍微壓平
11. 待涼後分割成所需大小,再將薩琪瑪倒出即可

備註:
糖水與油炸麵絲拌合時,注意溫度與時間的控制,時間過長溫度過低糖會凝結,就無法成形了
