芒果芝士蛋糕 (Mango Cheese Cake)



成份:

材料: (6寸圓型蛋糕)
 
清蛋糕 1個
砂糖 100克
芒果汁 3/4杯
清水 40毫升
芒果肉、杏仁片 (裝飾用)適量
忌廉芝士 120克
淡忌廉 125克
魚膠粉 1/2湯匙
橙酒 1湯匙
步驟:

  1. 清蛋糕橫切為二片;忌廉芝士置室溫中退冰
  2. 忌廉芝士與砂糖混合打至軟滑忌廉狀,然後將芒果汁3/4杯,分成4次加入芝士中打勻(* 芒果汁分開加入才可拌勻,緊記)
  3. 淡忌廉打起至企身
  4. 魚膠粉加清水拌勻,隔水座入熱水中慢火煮至溶解,當魚膠粉完全溶化後加入橙酒
  5. 將(2),(3)及(4)混合拌勻
  6. 組合蛋糕:清蛋糕放入模內,倒入半份(5)的芒果芝士,放上另一層蛋糕,輕輕壓平,倒入剩餘半份的(5),抹平表面,置入冷凍庫中冷藏半天左右,使蛋糕凝固
  7. 芒果起肉切片;杏仁片入焗爐烘脆.排放在蛋糕面上作裝飾
  8. 另外準備魚膠粉1/2茶匙.橙酒1/2湯匙.熱水1 1/2湯匙及芒果汁1湯匙,混合至溶解,掃上芒果面上.完成!
